Sweet Potato Chips



  • 3 large sweet potatoes, (washed)
  • 2 Tbsp. olive oil
  • salt and pepper to taste


  1. Preheat oven to 400 degrees. Line a large baking sheet with parchment paper, and set aside.
  2. Starting with the long end of the sweet potato, CAREFULLY cut thin, circular slices of the sweet potato and collect the pieces in a large bowl. Do this with all three sweet potatoes. (Note: it may be difficult to cut thin pieces of sweet potato when you get near the end of the potato. Just move on to the next full potato if cutting becomes too difficult.)
  3. Drizzle the olive oil over the sweet potato chips in the bowl. Make sure that all of the chips are covered by the oil. Salt and pepper to taste, and make sure seasonings are evenly distributed throughout the chips in the bowl.
  4. Evenly spread the chips onto the baking sheet lined with parchment paper, in 1 single layer. Bake for 40-50 minutes (until crispy), turning the chips half-way through.
