Quinoa – Stuffed Bell Peppers

Ingredients: 

  • 3 cups of cooked quinoa
  • 1/2 cup black beans, cooked (canned is OK too, rinsed)
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheese (to preference)
  • 1 small chopped onion, sautéed
  • 1 tsp. cumin
  • 1 tsp. garlic powder
  • 1/2 tsp. chili powder
  • 6- bell peppers, tops cut off, seeds removed

Directions:

  1. Preheat oven to 350 degrees. Line a 9×13 baking sheet with parchment paper.
  2. Place the bell peppers open-side up on the baking sheet.
  3. In a large bowl, combine the all of the remaining ingredients and seasonings, except for the cheese. This makes up the filling.
  4. Spoon the fillings into each bell pepper opening. Evenly top each bell pepper with the shredded cheese.
  5. Bake until peppers are tender, and evenly heated through (about 25-30 minutes).
  6. Serve and enjoy!
