Cauliflower Gratin (Vegetarian, Gluten-Free)

Inspired by Mark Bittman’s book: How to Cook Everything

Ingredients:

  • 1 large head of cauliflower, cooked and broken up into florets
    (any method for cooking the cauliflower will work fine!)
  • 1 cup of fresh basil pesto
    (to find the recipe for homemade pesto, click here! )
  • 1 1/2 cups fresh grated parmesan cheese
  • 2 large cloves of freshly minced garlic
  • 2-3 Tbsp. of olive oil
  • A few leaves of chopped basil for garnish (optional) 
  • A handful of breadcrumbs for sprinkling (optional, omit breadcrumbs to keep recipe gluten-free)
  • Pepper and iodized salt to taste

Directions: 

  1. Turn your oven onto the broiler setting.
  2. Spread the cooked cauliflower evenly into a large, shallow baking dish.fullsizeoutput_787.jpeg
  3. Drizzle 2-3 Tbsp. of olive oil evenly over the vegetables, followed by the freshly minced garlic.
  4. Drizzle or spread the 1 cup of fresh basil pesto over the cauliflower, as evenly as possible.
  5. Next, sprinkle the grated parmesan cheese over the entire dish.fullsizeoutput_788.jpeg
  6. Garnish by sprinkling a handful or so of breadcrumbs over the top of the dish, plus freshly chopped basil leaves if desired.
  7. Heat under the broiler for 2-5 minutes, or until you achieve a golden brown color over the toppings.

Cauliflower gratin makes a perfect side dish to any savory entree! I love this recipe for holiday meals especially. This recipe is great resource for those who are looking for creative ways to add non-starchy veggies into your diet. Plus, you get plenty of Vitamin C and protein in each serving!

Don’t forget the best part; when you are making cauliflower gratin at home, you save money! The first cauliflower gratin that I had ever tried was from Trader Joe’s. It came in a pretty standard sized frozen entree package, and was marked for somewhere between $5-6 dollars. I would have to purchase around 4 of those frozen cauliflower gratin packages in order to make as much food as this recipe yields. Making food from scratch at home SAVES MONEY!

HINT: Save yourself some time by preparing the fresh basil pesto ahead of time and freezing it so it is ready to go when needed.

Homestyle Buffalo Sauce (vegan option)

Ingredients (Yields 1 cup) 

  • 1/2 cup of vegan butter (recommended) — regular butter works too
    (I recommend the Earth Balance brand of vegan butter, available at Target)
  • 1/2 cup of hot sauce
    (check the ingredients look for one that is made with cayenne pepper)
  • 2 tsp. white vinegar 
  • a dash of garlic powder
  • a sprinkle of additional cayenne pepper if you prefer EXTRA spice

Directions: 

  1. Heat 1/2 cup of vegan butter in the microwave for about 30 seconds, or until completely melted. Pour the butter into a small glass dish. 
  2. Add 1/2 cup of hot sauce to the glass dish containing the melted butter. Mix until you achieve an evenly bright red color. 
  3. Add the white vinegar to the glass dish, and stir for a few seconds. 
  4. Add the spices to the glass dish and stir for 30 seconds.

This recipe makes a DELICIOUS buffalo sauce, and unlike other buffalo sauce recipes, it uses VEGAN butter which transforms the fat profile from being high in the artery-clogging saturated fat to being rich in the mono and poly unsaturated fats, the more heart-healthy choice! 

While this buffalo sauce contains MUCH less sodium than commercial brands, it’s important to remember that buffalo sauces are to be consumed in moderation. Buffalo sauce tends to be fairly in sodium, even when you make it at home.


With that being said, this buffalo sauce recipe has about 160 mg less sodium than many other commercial brands. Easy and quick, so make this at home!!!
